Rice and Beans 3 Ways

In our emergency pantry stockpile, we have the following:

  • Rice
  • A Can of Beans
  • Diced Tomatoes

And now, 3 ways to serve these ingredients so they’re filling, but not boring!

FIRST

Cook your rice and beans concoction. (It’s super easy, just cook your rice, open and drain your beans and diced tomatoes, and then combine the ingredients)

THEN

Pick your favorite style!

  • Open the top of a bell pepper, and scoop your mixture in. Bake at 350 for 25 minutes, or until the outside of the pepper is soft. Then Eat!
  • Eat with tortilla chips as a utensil! Bonus: less clean up! Plus: kids find it fun!
  • Put in a taco shell, and add other taco fixings if you have them!
